Well, in the midst of all this baking we have launched MealEssence.com at the Evansville Women's Conference on October 22, 2009.  We did bake a lot of cookies and took them to the conference.  Chocolate Chocolate Chip - try them for yourself but don't overbake them!

With a freezer full of a variety of breads, we begin the cookie baking part of holiday baking.  MealEssence.com has a booth at a Women's Conference this week and my holiday baking became a rush to bake 1200 cookies for the conference.  So while some of the cookies were put on the Christmas goody list, I must confess that most of my time went into the samples for the conference.

Well, as we discussed last week, October 1 marks the beginning of a month of holiday baking.   As I have baked my way through this week, I have realized that there is a lot of preparation that needs to be done before you crack an egg or turn on the oven.  It is very important that you are prepared for some serious baking so you may need to pick up some extra things at the store this week.  First of all you need to get the storage containers, making sure they will fit in your freezer, then remember to stock up on large zipper lock bags as well as plastic wrap, foil, and parchment paper.  If it's not a staple in your kitchen, you may also want to stock up on the cooking spray for greasing pans.

Yes, it is true – I want to discuss Christmas in October.  I am the last person to rush this season; in fact, I refuse to put out my decorations for Christmas until the Thanksgiving Dinner dishes are clean.  So why am I thinking about Christmas?  Now is the perfect time to plan ahead and take the “stress” out of Christmas.
