The good news is that my daughter came home at the last minute and helped me knock-out hundreds of cookies. We also got to spend hours together sharing, laughing, and working together. She is actually the best little cookie scooper this side of the Mississippi!!! We had the best weekend and hardly left the kitchen.
We made Chocolate Chocolate Chip Cookies from the MealEssence.com recipe archives. After about 600 cookies we decided that another type of cookie might be good and moved into Oatmeal Craisin Cookies. They are both great recipes and definitely worth trying.
My Christmas Cookie list is lengthy. I often wonder how others do their holiday baking. Do they stick with a few favorites or do offer a wide variety of cookies? What do you do? It seems like when I try to scale down on the cookie choices, one my family members will ask why I didn't make that one. So I find it is best not to waver from "tradition" at the Risner house!
Here's my list: Decorated Sugar Cookies, Peanut Blossoms, 7 Layer Bars, Lemon Bars, Maple Walnut Bars, Russian Teacakes (or Mexican Wedding Cakes), Pumpkin Cookies, Oatmeal Craisin, Snicker Doodles, and Orange Slice Cookies. The new one for this year is Chocolate Chocolate Chip Cookies, courtesy of my "cherished" daughter in law, Jessie! I don't promise to get them all made but I do promise to try.
