I have often looked to my grocery budget when I needed extra money. This month I am going to do a series of blogs sharing some easy ways to save at the grocery store.

1. Buy a seasoned rotisserrie chicken for $4.97 and cook three meals! 

Yes it is true, you can make three meals with one chicken. Begin by removing meat from the chicken. I like to divide it by white and dark. The white meat can be used for a variety of recipes including Chicken Pot Pie, chicken salads, chicken casseroles, etc. The dark, I prefer to use for chicken soups or gumbos. Wild Rice Soup is a personal favorite at the Risner house! But here is the best part...you can take the bones (with whatever meat is left on them) and boil in a large pot of water for several hours. I like to add celery tops, bay leaf, or carrots; sometimes I add seasonings but the seasoned chicken I buy at Sam's really has a lot of flavor so it doesn't need much. Once my broth is done, I strain it in a colander and pitch the bones. After the broth is cooled, I usually put it in the fridge or the freezer (if I'm in a hurry) and then skim the fat off the top when it solidifies. Once I've done this I am ready to use the broth or freeze the broth for later use. I usually buy Rames noodles and make chicken and noodle soup out of the broth!
