Valentines Day is very special to me because my first child was born on this special day.  Her name is Liz and she has been the best Valentine I ever received!  Because she was a Valentine baby, I have had many years to practice on Valentine treats. 

This week I thought I would share some wonderful Valentine ideas with you.  There are so many ways to let the people we love, know that we care.  Today we will start with a Linzer Heart Cookie.  This cookie is very easy to make and very impressive to give!  Try it ...!

The recipe for this delicious treat is on the MealEssence.com website, Linzer Heart Cookies.  You will also need two heart shaped cookie cutters, one smaller than the other.  I used a 3" heart and a 2" heart.  It's easy to buy heart cutters in graduated sizes.  Consider making bigger cookies if you'd like to give them as gifts!  Children love making these cookies if you're looking for an activity for a snowy day or after school.

So begin by making the cookies; rolling them out and cutting them into heart-shaped cookies (using the larger heart).  Divide them in half and cut half of them again with the smaller heart; making a heart-shaped hole in the center of each.  Just re-use the smaller heart dough or you can even back them without re-using.  Bake as directed but be sure not to overbake!

Once the cookies are baked and slightly cooled, melt the chocolate chips in the microwave for about 30-45 seconds, stir until smooth, and drizzle the chocolate over the cookies with the heart-shaped hole in the middle.  I used a pastry bag but you can easily do it with a teaspoon.

 Once the tops are done you are ready to spread the jam on the cookie without the hole in the middle.  Spread a thin layer of jam on each cookie and then press the cookie with the hole in the middle on top making a sandwich cookie.

It's so simple! Linzer Heart Cookies are a great way to tell the people you love, "Happy Valentines Day!"
