Last week I watched America's Test Kitchen and learned the "right way" to make an omelet; a light fluffy wonderful omelet. Today I am going to share this information with you! So listen up because your family is going to be so glad you did.
Beginning with the "stuff" inside the omelet select the items such as sausage, ham, bacon, onion, green pepper, mushrooms, cheese, etc. Cook these items first to your preferred doneness. We chose onion, peppers, mushrooms, and cheese. Saute the vegetables and fully cook any meat that you select and set aside.

Beginning with five eggs (makes an omelet for two) beat them with a mixer for three full minutes. We removed two of the yolks so that there would be less fat and less cholesterol and it still turned out great. Once the three minutes are up it is amazing how thick and foamy the eggs become. Next beat whipping cream (3 T.) until soft peaks form and then fold into the eggs. This gives them a very good flavor but again we did something different and decided to eliminate the extra fat and did not add the whipping cream. Yes, they were still delicious!
So to recap the recipe America's Test kitchen recommended was 5 eggs and 3 T. of whipping cream. My lower fat version was 3 eggs and 2 egg whites.
Next, melt about a tablespoon of butter into an omelet pan or skillet and pour egg mixture in. At a medium heat allow the omelet to form. Add about half the "stuff" you prepared ahead to the omelet.
Once the omelet begins to brown on the bottom (you can gently pull the edges to check), remove it from the heat and place it into a preheated 350 degree oven to finish cooking.
This could take 5-10 minutes and will depend upon how long it cooked on the stove. It is important to keep an eye on it so that you don't over cook. You will know when it is done because it will rise and lightly brown (more of a golden).

When the omelet is done remove it from the pan onto a flat surface or cutting board. 
Add the remaining vegetables and cheese and fold it in half.
Cut in half and serve.
