Yesterday's outdoor meal was brought indoor by a 6 o'clock thunderstorm!  Flexibilty is key to feeding our families.  Life happens - so sometimes we just need to roll with it. 

Here's what we did: 

We put a leaf in the table and sat inside.  The storm moved through in about an hour and the kids swam for the rest of the evening.  Everything was delicious and I have lots of leftovers.

  As a matter of fact, if you look at my calendar from Day 1, tonight "was" Pizza night and there was no cooking to be done but with a refrigerator full of delicious leftovers ...no need to spend extra on pizza.  More savings because we planned!

Tonight's "revised menu" - Cajun Chicken Breast Sandwiches, Creamy Potatoe Salad, Corn, and Coconut Cake for dessert. My family won't even feel like its leftovers tonight and I still get the day off.

I've tried your coconut cake and it is delicious! Not too sweet like some coconut recipes, and the frosting is to die for! Nice and light for summertime, not heavy like the cream cheese variety (but which I also like).

Thanks for the recommendations. I see from this week's worth of blogs that you stay flexible. That makes me feel better because I'm not a rigid person who sticks to plans, necessarily. Switching things around fits me better.
