When cooking with vanilla extract remember to add while cooling; heating it deminishes the flavor. When buying vanilla look for two key words, natural and pure. Avoid terms like flavoring and imitation as those are made from artificial flavorings and have bitter after tastes. While imitation may cost less, pure vanilla takes less to flavor. Did you know you can make your own vanilla extract? Split one or two vanilla beans and add 3/4 c. vodka in a jar. Seal tightly and let stand in a cool, dark place for at least 4 months; shake occasionally. This makes a great gift for foodies!
