  • 2 medium acorn squash
  • 1 tablespoon butter
  • 1/4 cup brown sugar
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon clove ground


  1. Cut each squash in half and then into 1 inch rings semi circles; slicing horizontally through squash. Remove seeds.
  2. Place rings into a pie pan or baking dish and sprinkle with salt and pepper.
  3. Bake in a 350 degree oven for about 20 minutes. Meanwhile, combine butter, brown sugar, lemon juice and cinnamon. Microwave for about 20 seconds until butter is melted and stir.
  4. Pour butter mixture over squash and bake for an additional 10 minutes.
