Chicken Italian

  • 8 ounce pasta fettuccine
  • 1 cup spaghetti sauce
  • 1/2 cup bread crumbs Italian style
  • 2 tablespoon butter or margarine
  • 1 pound chicken breasts
  • 1 cup shredded mozzarella cheese


    1. Prepare fettuccine according to instructions.
    2. Place butter or margarine in a shallow 2-quart microwave-safe baking dish. Microwave on High (100% power) for 30 seconds or until butter or margarine melts.
    3. Cut chicken breasts to make four to six fillets; pound chicken lightly. Dip chicken in melted butter or margarine; then coat with bread crumbs. Place coated chicken in baking dish and top with spaghetti sauce.
    4. Cover with plastic wrap, leaving a vent to allow steam to escape during cooking. Microwave on Medium-High (70% power) for 5 minutes. Remove from oven and rearrange chicken pieces, moving less-cooked pieces next to the sides of the dish.
    5. Cover again and microwave on Medium-High for 5 more minutes. Remove from oven and sprinkle mozzarella cheese over chicken.
    6. Microwave uncovered on Medium-High for 1 minute. Let stand for 3 minutes before serving with hot buttered fettuccine.
