Chicken Salad

  • 5 cup chicken breast cooked
  • 1 1/2 cup mayonnaise
  • 1 cup slivered almonds
  • 1 can mandarin oranges
  • 1 can pineapple tidbits
  • 1 1/2 cup grapes seedless
  • 1 1/2 cup celery
  • 1 teaspoon salt
  • 3 cup rice
  • 2 tablespoon orange juice
  • 2 tablespoon vegetable oil
  • 2 tablespoon vinegar


    1. In a mixing bowl, combine chicken, orange juice, oil, vinegar and salt; set aside (mixture may be refrigerated overnight at this point).
    2. In another bowl, combine rice, celery, grapes, pineapple, orange sections, almonds and mayonnaise. Toss gently to mix.
    3. Add marinated chicken mixture, blending gently and thoroughly. *Serve on lettuce leaves with sliced fruit and/or French bread.
