Chicken and Sausage Gumbo

  • 4 cup rice
  • 1 can tomatoes petite diced
  • 1 1/2 cup chicken
  • 1 tablespoon cajun seasoning
  • 4 clove garlic
  • 1/4 teaspoon ground red pepper
  • 12 ounce sausage links smoked turkey
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup celery
  • 1/2 cup green pepper
  • 3 cup water
  • 1 cup onion
  • 2 cup okra (or 10 oz. package frozen okra)
  • 1/3 cup flour
  • 1/3 cup oil


    1. For roux, in a medium saucepan stir together flour and oil until smooth. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir constantly about 15 minutes or until a dark reddish-brown color is reached; cool.
    2. Chop onion, sweet pepper, and celery and mince garlic. Place water in a 4-quart crockpot. Stir in roux. Add sausage, chicken, okra, onion, sweet pepper, celery, garlic, salt, black pepper, red pepper, cajun seasoning and tomatoes.
    3. Cover and cook on low heat for 6 to 7 hours or high heat for 3 to 3/12 hours. Serve over hot cooked rice.
