Spinach Tart

  • 3 tablespoon butter or margarine
  • 1 pound spinach
  • 2 count green onions
  • 3 count eggs
  • 1 cup gruyere or swiss cheese
  • 1 count pie shell 9 inch
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • 3/8 cup grated Parmesan cheese


    1. Preheat oven to 425 degrees.
    2. Wash, pat dry and finely chop spinach. Melt 2 tablespoons of the butter or margarine in a skillet; add spinach and onions and saute until spinach is barely wilted (about 3 minutes).
    3. Beat eggs in a mixing bowl; add milk, salt, pepper and nutmeg. Add sauteed vegetables and cheese to egg mixture; blend well.
    4. Pour filling into pie shell; dot with remaining butter and sprinkle with parmesan cheese.
    5. Bake for 10 minutes; then reduce heat to 350 degrees and bake 25 minutes longer or until set. Cut into wedges and serve.
