Sausage and Pasta Salad

  • 8 ounce pasta bow tie or spiral shaped
  • 1 small green pepper
  • 1 small sweet red pepper
  • 1 medium onion
  • 1 can kidney beans
  • 2 tablespoon fresh parsley
  • 1 clove garlic
  • 1 pinch ground black pepper
  • 1/2 cup vinegar red wine and oil salad dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon soy sauce
  • 1/8 teaspoon hot pepper sauce
  • 1/2 pound summer sausage


    1. Cook pasta according to package directions; drain and set aside. Cook sausage and cool.
    2. Drain and rinse beans.
    3. In a large bowl, combine pasta, sausage, green and red peppers, onion and beans.
    4. In a small bowl, combine vinegar and oil dressing, parsley, garlic, salt, soy sauce and hot pepper sauce; beat until well combined. Pour dressing over salad; add black pepper and toss to mix.
    5. Cover and refrigerate several hours before serving.
