Mediterranean Pasta Salad

  • 1 can artichoke hearts 14 oz
  • 1 cup olives ripe whole pitted
  • 1 small onion red
  • 1 cup salad dressing Italian
  • 1 pound pasta spiral shaped
  • 1 cup celery
  • 1 cup tomatoes cherry
  • 1 small green pepper
  • 3 ounce cheese Provolone
  • 1 teaspoon ground black pepper
  • 3 tablespoon grated romano cheese
  • 1/2 pound mushrooms
  • 1/2 pound salami Genoa


    1. Drain and quarter artichoke hearts.
    2. In a medium bowl, combine artichoke hearts, mushrooms, salami, olives and onion.
    3. Pour Italian dressing over salad and toss to mix. Cover and marinate in refrigerator for 3 hours.
    4. Cook pasta according to package directions to firm(al dente) stage; drain and set aside to cool.
    5. In a large salad bowl, combine marinated ingredients, pasta, celery, tomatoes, green pepper, cheese, salt and pepper. Toss lightly to mix; then cover and refrigerate for 30 minutes.
    6. To serve, garnish rim of bowl with salami slices folded in quarters for a ruffled effect. Sprinkle with romano cheese.
