Creamy Potato Salad

Serving Suggestion: Serve in a lettuce lined bowl or platter


  • 8 medium potatoes
  • 6 count eggs
  • 3 count celery
  • 1 medium onion
  • 1 1/2 cup mayonnaise
  • 1 tablespoon mustard prepared
  • 1/2 teaspoon pepper
  • 1/2 cup cottage cheese
  • 1/4 cup fresh parsley
  • 1 teaspoon dill weed
  • 1 teaspoon salt


    1. Peel, cook and cube potatoes. Hard cook, peel and chop eggs.
    2. Mince parsley.
    3. In a large bowl, combine potatoes, eggs, celery, onion and parsley.
    4. In container of a blender or food processor, combine mayonnaise, cottage cheese, mustard, salt, dill weed and pepper; process until smooth. Pour dressing over potato mixture and stir gently to combine.
    5. Cover and refrigerate for at least 6 hours.
