German Potato Salad

  • 3/8 cup vegetable oil
  • 3/8 cup vinegar cider
  • 1/2 teaspoon mustard dry
  • 3 pound potatoes russet
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoon green onions
  • 6 slice bacon


    1. Place potatoes in a large pot and add salted water to cover potatoes by one inch. Cover pot and bring to a boil; cook for about 20 minutes or until potatoes are tender.
    2. Drain potatoes; peel potatoes, cut into 1/4 inch slices, and place in a large bowl.
    3. In a small bowl, combine oil, vinegar, sugar, mustard, salt and pepper; mix well.
    4. Pour dressing over warm potatoes and toss gently to coat. Cover and refrigerate for several hours or overnight.
    5. Before serving, cook and crumble bacon and chop onions or chives and mix in salad.
