Beef Bourguignonne

NOTE: Equal parts of parsley


  • 2 tablespoon flour
  • 1 cup water
  • 1 cup wine red
  • 1 1/2 teaspoon bouillon granules beef-flavored
  • 1 teaspoon tomato paste
  • 1 count bay leaf
  • 1 pound beef chuck roast boneless
  • 1 count salt
  • 1 count pepper
  • 1 clove garlic
  • 2 tablespoon butter or margarine
  • 1 cup onions pearl
  • 1/2 teaspoon fines herbes
  • 1 cup mushrooms
  • 1/4 cup brandy


    1. In a bowl or cup, combine wine, water, flour, bouillon granules, tomato paste, fines herbes and bay leaf; set aside.
    2. Cut beef into 1-inch cubes. Season beef with salt and pepper. In a skillet, cook beef and garlic in butter or margarine until beef is browned on all sides.
    3. Add brandy, stirring to loosen brown bits from skillet. Transfer beef mixture to a Dutch oven.
    4. Pour wine mixture into skillet and cook over medium heat for 2 to 3 minutes; then pour over beef mixture. Cover and bake at 350 degrees for 2 hours or until beef is tender.
    5. Add sliced mushrooms and cooked onions during last 30 minutes of baking. Remove bay leaf before serving. Serve with hot buttered noodles or rice.
