Homemade Noodles

My Grandma made the best noodles but ingredients are only the beginning! There's more to noodles than flour, salt, eggs, and water. It's a science, so read through this recipe before you start.


  • 3 tablespoon water cold
  • 3 count eggs
  • 2 cup flour
  • 1 pinch salt


    1. Combine flour and salt; beat eggs and water.
    2. Mix well, kneeding just enough to get the gluten flowing.
    3. Divide in half or thirds.
    4. Roll out on floured surface and let dry.  The thickness of the noodle is personal but thinner will dry faster and usually make better noodles (not tough).
    5. Dry for about an hour until partially dry but still flexible.
    6. Roll like jelly roll and cut to desired thickness.
    7. Shake out the noodles and dust with a small amount of flour to keep from sticking together.
    8. Bag and store in freezer or cook immediately by drop in boiling broth and cook for about 20 minutes.
    I like to freeze my noodles because I think dropping frozen noodles into boiling broth makes a lighter noodle!
