Sheris Scrambled Eggs

Eggs should be light and fluffy not tough and dry!


  • 6 count eggs
  • 2 tablespoon butter
  • 1/4 cup milk
  • 2 slice American cheese
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt


    1. Beat eggs well, adding milk, salt, and pepper.
    2. Melt butter in a large skillet.
    3. Do not brown butter, just melt it. Add the egg mixture. Cook at medium heat scraping bottom of skillet with a spatula.
    4. Break american cheese into small pieces and stir into egg mixture as it melts.
    5. Do not overcook eggs. Continue to gently toss them until they are slightly firm. Turn off heat and cover skillet. Let stand covered for about 3 minutes. They will continue to not overcook!
