Chicken Caesar Salad

  • 2 count lettuce Romaine
  • 1/2 cup Parmesan cheese
  • 3 tablespoon mayonnaise
  • 3/4 cup yogurt plain
  • 4 teaspoon white vinegar
  • 1 cup croutons
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 count chicken breasts
  • 2 clove garlic
  • 6 tablespoon lemon juice


    1. Preheat oven - broil 500 degrees. Mix 2 T. of the lemon juice with garlic and cover chicken breasts. Salt and pepper and broil for 5 minutes, turn over and broil until done. I prefer grilling the chicken weather permitting. Cool.
    2. Combine remaining lemon juice and mustard in a blender or food processor with vinegar, yogurt, mayonnaise, and 1/4 c. of the Parm. cheese. Blend until smooth. Set aside.
    3. Cut cooled chicken into strips. Toss strips in half of dressing (step 2). Set aside.
    4. Wash and break lettuce leaves into bite size pieces. Arrange lettuce on plate, add chicken and croutons, and drizzle with remaining dressing. Top with remaining Parmesan cheese.
