This is a great Valentine Cookie.

  • 3/8 cup raspberry jam
  • 3/8 cup chocolate chips
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 1/2 cup sugar
  • 1 1/2 cup butter
  • 1/2 teaspoon salt
  • 4 cup flour

    1. Combine flour and salt and set aside. Cream butter and sugar; beat well. Add eggs one at a time and then vanilla.
    2. Gently fold in flour mixture until ball forms. Roll dough on floured surface, 1/4 inch thick.
    3. Cut out cookies with a 2-4 inch heart-shaped cookie cutter. Divide the hearts in half and, using a smaller heart-shaped cookie cutter, make a hole in the middle of half of the hearts.
    4. Use the cookies holes to make more cookies or bake for use. Bake in a 350 degree oven for 10-12 minutes; do not over bake! Cool slightly.
    5. Drizzle the hearts with holes with the melted chocolate. Then spread each of the other hearts with raspberry jam. Place the drizzled hearts on top of the jam, making a sandwich cookie. Do not store or bag until chocolate is hardened.
