Seafood Pilaf

This can be baked in a casserole with raw scallops and shrimp. Add 1/2 c. water.


  • 1/4 cup onion chopped
  • 2 tablespoon butter
  • 1/4 cup carrots diced
  • 1/2 cup celery diced
  • 1 can chicken broth 14 oz
  • 1 medium tomato
  • 1 cup wild rice blend any rice can be substituted
  • 1/2 cup almonds slivered
  • 8 ounce shrimp large cooked
  • 8 ounce bay scallops cooked


    1. Saute onions, carrots, and celery in butter until tender. Add chicken broth, rice, and tomatoes.
    2. Bring to a boil, cover and simmer for about 40 minutes.
    3. Add scallops and shrimp and cook for about 5 more minutes or until scallops and shrimp are hot and rice is done.
    4. Stir in almonds and serve.
    You can substitute uncooked scallops and shrimp by cooking for 10 more minutes instead of 5.  You can also bake this recipe in an oven proof casserole without the 40 minute simmer.  Just add all ingredients and bake for 45-50 minutes.
