Quick and Homemade Chicken Noodle Soup

  • 2 medium chicken breasts with or without bone/skin
  • 1 quart chicken broth
  • 1 quart water
  • 2 medium onion diced
  • 1 cup carrots diced or sliced
  • 1 cup celery diced or sliced
  • 1 teaspoon salt
  • 2 whole bay leaves
  • 2 tablespoon cornstarch
  • 1 pound ground chicken
  • 4 ounce noodles dry thin


    1. Brown ground chicken and 1 diced onion; add water and chicken broth and boil for 15 minutes.
    2. Add chicken breast and continue to boil for 20 minutes.  Remove chicken breast and set aside.
    3. Strain chicken broth and put broth back into pot.  Discard ground chicken and onion (you can use this chicken but not for this soup).
    4. Add carrots, celery, and remaining onion to broth and bring back to boil.  Add bay leaves and salt and simmer for about 30 minutes or until vegetables are fully cooked and tender.
    5. Dice chicken breasts, when they have fully cooled, and add to pot.
    6. Combine cornstarch and 1/4 c. water and stir into boiling broth.
    7. 10 minutes before serving add 4 oz. noodles.
    8. Remove bay leaves and serve.
