Southwest Shrimp Salad

This is a meal, very hearty salad. Delicious!

Ingredients

  • 1/8 cup queso fresca or feta cheese crumbled (optional)
  • 16 large raw shrimp 20-30 count
  • 1 teaspoon salt divided use
  • 2 teaspoon cumin divided use
  • 1 teaspoon chili powder
  • 1/4 cup cilantro chopped
  • 1 small avocado sliced or diced
  • 1 count Roma tomato diced
  • 1 cup corn
  • 1/8 count red onion thinly sliced
  • 2 count green onions chopped
  • 1/2 cup shredded cabbage
  • 1 head Romaine lettuce cut or tear into small pcs
  • 1/8 cup sour cream or Greek yogurt
  • 1/2 medium lime juice of
  • 3 tablespoon Olive oil divided use

Directions

    1. Combine chili powder, 1 t. cumin, cayenne pepper, and 1/2 t. salt.  Sprinkle over raw shrimp on both sides, coating well.
    2. Put 1 T. Olive oil in a grill pan or skillet and add shrimp.  Cook for about 5 min or until done (pink and plump).  Remove from heat.
    3. In a large bowl layer:  Romaine, cabbage, corn, tomatoes, red and green onions, avocado, and cilantro.
    4. In a seperate container, combine 2 T. Olive oil, sour cream, 2 t. cumin, 1/2 t. salt and the lime juice.  Stir well and add a little sugar if its too tart (based on amount of lime juice).
    5. Toss the dressing over salad just before serving.  Top with shrimp.
    6. Sprinkle with Queso fresco (if desired).
